如何保存有生命的葡萄酒?

葡萄酒很娇贵,要保存起来不那么容易。这是因为葡萄酒是有“生命”的,装到瓶中之后还会继续发酵,其他任何酒, 不管是中国的白酒、法国的白兰地,还是苏格兰德威士忌,装到瓶子里就没有什么发展空间了。
所有保存条件中,最重要的两个因素是温度和光照。葡萄酒的保存温度应该是13℃左右,曾经有科学家做过专门的分析,认为理想温度是12.8℃。加州大学化学系教授Alexander J. Pardell曾经做过试验研究, 以13℃作为基准, 如果温度上升到18度,葡萄酒的成熟速度将变成那个1.2~1.5倍,如果温度增加到23℃,成熟速度将变成2~8倍,温度上升到32度,成熟速度将变成4~56倍。这点足以证明10℃~18℃的温度对于保存葡萄酒来说是比较合理的范围。另外,温度要保持恒定,变化很大的温度, 对酒也不利。而光线中的紫外线对于葡萄酒的成熟和老化也有很大影响。暴露在强烈日光下6个月足以导致葡萄酒变质。
至此,一幅最理想的保存环境的画面被勾勒出来:10℃~18℃恒温,避光,避震,无异味,湿度70%左右,酒瓶卧放。
葡萄酒在出厂后实际还处于再发酵过程中,如果把它储存在适当温度和无震动环境中,这种微生物再发酵过程就会进行得比较充分,使其口感更香醇。
红酒控制口感温度在12℃~15℃之间。 由于震动会使酒内沉渣泛起,如此反复会有极大的影响,导致口感变酸,这也是压缩机制冷酒柜所无法解决的问题,所以电子酒柜是你储酒的选择。同时更重要的是采用半导体制冷技术,工作中无噪音和震动。

Temperature and light are the two most important factors in all storage conditions for wine. The best temperature for
storage of wine should be around 13℃. Once scientists have done a special analysis, considered that the ideal temperature
for wine is 12.8℃. Through testing and research, setting 13℃ as the basic degree, Professor Alexander J. Pardell from University
of California, Department of Chemistry found that if the temperature rose up to 18℃, wine will ripen faster than 1.2~1.5 times.
If the temperature increased up to 23℃, the speed will be faster than 2~8 times. If the temperature rose up to 32℃, the speed
will be faster than 4~56 times. The results prove that the temperature from 10℃~18℃ for preservation of wine is a more reasonable
range. In addition, the best temperature to maintain a constant temperature, unstable temperature is no good for wine. The
ultraviolet light also has a significant impact to ripe of wine and its aging. To be exposed under strong sunlight for 6 months, it
may lead to deterioration of wine.
At this point, a most ideal environment to preserve the images were outlined: 10℃~18℃ constant temperature, no light,
no vibration, no flavors, 70% humidity and wine bottle should be lying down.
Wine is actually still in the re-fermentation processing after leaving factory. If it is stored in the appropriate temperature
with no vibration environment, such a microbial fermentation process will be conducted quite full again. So it tastes more
mellower.
The temperature for best taste of red wine is between 12℃~15℃. In vibration condition, the sediment will be floating in
wine. If it appeared repeatedly, it will be resulting in acid taste. This is why the refrigeration system with compressor for wine
